In 2020, Chef Mindy Lim brought her own take on vegan sushi to her new home in Las Vegas. Presenting Daikon Vegan Sushi & More, an elegant evolution of the approach to plant-based Asian fusion fast-food cuisine. We are proud to share our commitment to high-quality plant-based cuisine with our new friends and neighbors here in the vibrant city of Las Vegas.
We create flavor-sophisticated scratch-made food using thoughtfully chosen ingredients that come from the earth. Every dish reflects our multicultural influence and features many of the vegetables, spices, and techniques that truly inspire us to eat and serve beautiful food.
